Tucson, Ariz. - August 19, 2013 – By now, most gluten-free consumers have heard or read about the new FDA standard with regards to gluten-free food labeling. It is a standard followed by other countries. While it is easy to explain from a scientific viewpoint, it is very difficult to visualize or perhaps even understand for many consumers. What does a 20 parts per million food standard really look like?
Yummee Yummee created a simple graphic for a better understanding of this standard. The idea is simple - a pinch of salt. Take a pinch of salt and drop it on a dark area - paper or fabric. A pinch of salt weighs about 360 milligrams, a milligram is 1 thousandth of a gram (1/1000). How much weight does it take to reduce that pinch of salt to 20 parts per million? It’s a pinch of salt in 39.6 pounds or almost 8 five-pound bags of flour. That’s the FDA standard. A pinch of salt in 40 pounds of gluten-free flour is less than 20 parts per million. That’s what ‘gluten-free’ means on food labels starting about a year from now.
